Every refrigerator has leftovers that could be a genuinely good second meal or a genuinely disappointing one, and the difference almost always comes down to the reheating method rather than the food itself. The microwave is the default because it’s fast, but fast and right are rarely the same thing when it comes to food texture. Crispy things turn soft. Proteins tighten into rubber.
